The 2023 Chirnside Cabernet was such a treat for us to make! After working with Mac Forbes, and really honing in on claret styles of cabernet making gave us an opportunity to work with an incredible older vineyard that’s very well suited to growing excellent cabernet. A classic style, coming from a long cool ripening season to help produce a wine of vibrancy and elegance.
Tasting Note:
'The blue fruit in Cabernet is so tantalising when it’s there. And it’s aplenty in this wine. So classy, so cool in feel. Perfumed with wet black tea leaf, violet, raspberry, mulberry and plum, very firm in the way it wears the flavours and texture on the outside but cuddly and soft on the inside. The fruit is ripe with a gentle dried herb note, the type of aniseed coolness that soothes and brings on long aftertaste. ‘Deep blue/purple colour, vibrant lifted aromatics on the nose, cassis, heady spices, anise, wild fennel, tobacco leaf. Fleshy, juicy blackcurrant and blueberries that glide like velvet. Tannins interweave to a long finish.’ Justin and Lisa Jenkins
