De-stemmed fruit was fermented on skins for 21 days. 50% run off to puncheon prior to pressing. The best two puncheons were selected for their incredible depth and complexity, alluring spice, and floral notes. Intense fruit weight and well-placed frame make this wine a pleasure to drink.
Tasting Note:
'Pink quince colour, wild fennel & anise, spiced pears, and a layered profile complemented by a long, quenching acidity. Spiced skinsy-gris, teeming with the essence of white florals and orchard fruits. This delightfully assertive wine boasts a textured, fleshy core and stands out with its tea-like tannins, skilfully derived from meticulous skin contact.'
