NV Illuminate Sparkling
Made in extremely limited quantities exclusively for our cellar door and wine club, this traditional method sparkling is crafted from 100% Pinot Noir, spending nine months in barrel prior to tirage before being hand disgorged with zero dosage.
Tasting Note
Bright, pale gold in the glass with a fine stream of delicate bubbles and subtle brioche tones. The nose is quietly complex, showing small red fruits, crisp red apple skin, freshly baked pastry and a hint of leatherwood honey.
The palate is bone dry, chalky and finely textured, with a gentle savoury edge and a long, composed finish. Elegant and tightly framed, it is drinking beautifully now while promising further complexity with short-term cellaring.
